Hello Wednesday Morning!

On my morning commute, I was “blinded by the light”, hehe. I had to do it pun intended. Oh and please excuse the dirty windshield. This was a gorgeous sunrise with the sun peaking through. It truly blinded me, but was still such a welcome sight to see!

Cute Deviled Egg Chicks…recipe!

This recipe is a really good one for an Easter brunch or potluck! And the finished results are so cute!

PhotoDeviled Egg Chicks!

Prep Time: 30 mins
Total Time: 1 hr
Yield: 8 chicks

Ingredients

  • 8 extra-large eggs, hard-boiled
  • 1/2 cup heavy mayonnaise
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon prepared mustard ( table)
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh coarse ground black pepper (optional)
  • 4 pimento stuffed olives, slice each into 4 slices
  • 16 slices red bell peppers, tiny triangles, can sub carrots

Directions

  1. Place eggs in saucepan of cold water.
  2. Bring to a boil over med-high heat, STIRRING GENTLY AND CONSTANTLY, *this keeps the yolks in the center.
  3. Boil and gently stir for 2 minutes.
  4. Place on tight fitting lid and turn off heat.
  5. Let sit for 25 minutes.
  6. Carefully put eggs into bowl of ice water. Let sit for 5-10 minutes.
  7. Carefully peel eggs. *This is easy if eggs are older.
  8. Rinse with cold water, place on paper towel.
  9. Slice thin slice off bottom of each egg, *this will ensure they stand up later.
  10. With paring knife, cut top third of egg off in a zig-zag pattern. CAREFULLY remove tops.
  11. CAREFULLY scoop out yolks. *Take your time doing this, you may need to use your paring knife to break up yolks inside to get them out.
  12. Place yolks in mixing bowl, mash WELL with fork.
  13. Stir in rest of ingredients except olives and peppers.
    Overfill bottom egg white “shell” with filling, place top “shell” on carefully pressing very gently.
  14. Press olive slices gently into the filling to make the “eyes”.
  15. Push 2 triangles of red pepper into filling to make beak.

Note: You may want to boil a few extra eggs for this, in case some of them don’t peel well or get wrecked, it happens. Also so that you will have plenty of filling, too! If you boil extra eggs and add the yolks to the filling, just add a bit more of the ingredients to compensate, it’ll be fine! ;).

Turkey Tacos just in Time for the Weekend!

I have a craving for some tacos. I don’t know where the craving started, but I have been craving them all week. Hence, my search for a taco recipe that is going to satisfy my craving, yet is still healthy so I don’t undo my hard work from working out this week!

So I bring you…..drumroll please……..

Lean Turkey Tacos

These are super easy to make and taste so good! So fast to make on a weeknight or busy weekend!

Ingredients

  • 1 Tbsp olive oil
  • 3/4 cup chopped yellow onion
  • 1 lb lean ground turkey
  • 2 cloves garlic
  • Salt and freshly ground black pepper
  • 1 Tbsp chili powder (or 2 tsp regular chili powder and 1 tsp ancho chili powder)
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 cup tomato sauce
  • 1/2 cup low-sodium chicken broth
  • Iceberg or Romain lettuce leaves, doubled up, for serving
  • Shredded cheese, diced Roma tomatoes, diced red onion, diced avocado, chopped cilantro, light sour cream, for serving

Directions to make:

Heat olive oil in a non-stick skillet over medium-high heat. Add onion and saute 2 minutes. Add turkey and garlic, season with salt and pepper, and cook, tossing and breaking up turkey occasionally, until cooked through, about 5 minutes. Add chili powder, cumin, paprika, tomato sauce and chicken broth. Reduce to a simmer and cook about 5 minutes until sauce has reduced.

Serve mixture over lettuce leaves with desired toppings.

Makes approximately 6 tacos

Happy St. Patrick’s Day and Guinness Brownies Recipe

In honor of St. Patrick’s Day, I have been scouring the web for good brownie recipes using guinness beer. The recipe below is from Sprinkle Bakes.

Five Ingredient Guinness Brownies
Yields one 8-inch pan of brownies, 12 to 15 servings

Notes: If you don’t have self-rising flour on hand, add 1 teaspoon baking powder and 1/2 teaspoon salt to the flour before mixing it into the batter.
Since these brownies are almost pudding-like in the center, they need to cool completely in the pan before slicing.

7 egg yolks, at room temperature
2 cups (400g) granulated sugar
3/4 cup (177ml) Guinness Extra Stout
1 cup (125g) self-rising flour
2/3 cup (85g) unsweetened  cocoa powder

Preheat the oven to 350°F.

Spray an 8-inch square pan with flour-based baking spray, or line it with parchment paper that overhangs two edges of the pan.

In a large bowl, whisk together the egg yolks and sugar. Add the Guinness Extra Stout and whisk until combined. Whisk in the flour and cocoa and mix until well combined.

Pour the mixture into the prepared baking pan and bake for 25-30 minutes. The brownies are done when a toothpick inserted in the center comes out with a few moist crumbs attached.

Let the brownies cool completely in the pan. Serve the brownies from the pan or lift them out with the overhanging parchment and slice them into squares.

We love these warmed in the microwave (about 20 seconds at 100% power) with scoops of vanilla ice cream on top.

Resistance workout today!

I can’t tell you how frustrating it is to keep up with trying to increase my weights. I started my journey with a set of dumbells (3, 5, 8 lbs.). Well I soon outgrew those weights.

As I stayed consistent with my workouts, I was having to increase my weights more frequently. This is a good thing! Essentially it means I am getting stronger and building lean muscle.

So guess what finally arrived today?

The ever coveted bowflex selecttech 552 adjustable dumbells.

I haven’t had a chance to use them or unpack them from the box. But you can be sure I will be busting these babies out of the box tomorrow.

Starting a new workout program! Join Me!

Me, after my sweaty home workout.

I am starting this weight loss journey overweight, low self confidence, and low self-esteem. I am slowly learning to kick my negative self talk, and self-defeating attitude to the curb.

I am slowly gaining discipline, consistency and accountability for my choices, Which is huge!

I can’t tell you how many times I have started a new habit only to quit doing it a few weeks into the process! I start a new workout or start going to the gym and I’m going strong for a few weeks, and then life gets in the way. I get sick, or I’m too busy and exhausted, or I fall back into my old routines of junk food eating, desserts, and fast food. Because it’s easy, familiar and maybe a little comforting (like a down comforter on a cold day, or that biscuits and gravy that doesn’t love me back).

I am so determined to get my health back. I want to be the person who does not have to sit back, watch others have fun because I am too exhausted to participate.

As a mom on the go most of the day, I don’t have a lot of time or money to dedicate to going to the gym. I barely have time for sleep on a good day.

Get your health and your sanity back, by taking time to take care of yourself. How are you supposed to care for your family, your kids or your fur babies, if you don’t take care of yourself?

Follow me as I struggle, yet push on in my weight loss journey. I will NOT give up this time. This time WILL be different.

No one said it was going to be easy, but I hope to motivate and inspire others to join me through my struggles and triumphs….If I can do this, so can you!
